How to Make Spicy Pickled Chicken Feet?
Pickled Chicken Feet are a typical Sichuan-style snack made primarily from pickled peppers and chicken feet. Not only are they delicious, but they also have the effect of stimulating the appetite and promoting blood circulation. In fact, the preparation of Pickled Chicken Feet is not very complicated, and the specific steps are as follows.
Large glass bowl or other large container
500 grams of high-quality chicken feet, half a lemon, half an onion, three celery stalks, two bottles of wild peppers (i.e., millet peppers), fresh flower pepper, cinnamon, star anise, ground pepper, garlic, old ginger, and other vegetables (such as carrots, lettuce sections, or any other crisp vegetables)
1. Slice the lemon and onion, and lightly crush the celery stalks with a knife.
2. Crush the old ginger and garlic, wash and dry the peppercorns, cinnamon, and star anise, and cut the wild peppers into small pieces. Place all these ingredients in a container.
3. Wash the chicken feet and cook them until they are partially cooked (the cooking method may vary depending on the desired taste. Some recipes call for cooking the chicken feet until they are soft and deboned, but be careful not to overcook them or they will become too soft and mushy). After cooking, remove them from the water, rinse off any foam, cut them into two or three pieces, and let them dry.
4. Place the dried chicken feet in a jar and cover them with the sliced lemon, onion, and celery.
5. Boil some water in a large bowl, let it cool, and then add the garlic, pickled red peppers, wild peppers, ginger slices, and peppercorns.
6. Take an equal amount of pickled vegetable brine from an old jar and pour it into the cooled water.
7. Place the dried chicken feet, along with the sliced lemon, onion, and celery, into the large glass bowl and let them soak for at least 30 minutes.
