The mineral elements sodium, iron, and zinc contained in the tip were more than twice as much as those in the base of asparagus. The content of vitamin C, folic acid, and rutin in asparagus tips is 1 to 2 times higher than that in the base; the content of B vitamins and asparagus saponins is also significantly higher than that in the base. Therefore, when eating asparagus, we should pay special attention to protecting the nutrition of asparagus tips, and not cook them for too long to avoid destroying these precious nutrients.
