Oil-Splashed Noodles' Environmental Concerns and Nutritional Benefits

The notion that oil-splashed noodles pollute the environment has left many perplexed. How could oil-splashed noodles harm the environment? Is it due to the smoke generated from heated oil? After all, stir-frying also produces smoke. Upon further investigation, it became clear that oil-splashed noodles are not banned, but local environmental authorities, aiming to enhance urban environmental protection and reduce pollution, require restaurants to install oil smoke purifiers and oil-water separators to prevent smoke pollution. As for food, the environmental departments do not interfere, perhaps because small oil-splashed noodle shops may be reluctant to invest in these equipment. Consequently, I am hesitant to serve oil-splashed noodles.

Oil-splashed noodles boast a rich history and are renowned as a delicious snack in Xi'an, beloved by many as the ultimate pasta. They were once hailed as the best pasta due to their uniqueness and flavor, which, when combined with various ingredients, becomes truly captivating. Thus, oil-splashed noodles enjoy immense popularity in the northwest region. Noodles, like rice, are staple foods in people's diets, rich in carbohydrates and containing small amounts of protein and trace elements. Primarily made from wheat, pasta is highly nutritious and an indispensable part of our daily meals.

In the northwest, people have a strong preference for various types of pasta, which are regulars on ordinary people's dining tables. However, preparing oil-splashed noodles requires culinary skills not everyone possesses, making them a renowned Xi'an snack. Although not excessively priced, they offer an authentic taste that visitors to Xi'an should not miss. This dish is also renowned in China.
