Consuming little roosters during the growth period can have a certain effect on promoting height growth in children. This is because the growth hormone in newly hatched little roosters is relatively abundant, and their testes contain rich androgen that can promote growth. Moreover, the muscle of little roosters accounts for approximately 60% of their body weight, containing richer proteins and phosphates. 1. Boil the slaughtered little rooster in water, using high heat. The purpose of boiling is to remove impurities from the chicken meat, and the boiling time should generally not exceed 10 minutes. Place the boiled little rooster in cold water to tighten and add elasticity to the skin.
2. Heat a pan with a small amount of cooking oil until the oil temperature reaches 3-5 cheng (a traditional measurement of heat, approximately 90-150°C). Add prepared lard. Add scallions, star anise, fresh Sichuan peppercorns, garlic cloves, and dried chili peppers. Fry until the scallions turn golden brown and remove the seasonings from the oil.
3. When the oil temperature reaches 5-8 cheng (approximately 150-240°C), add the little rooster and fry to make the meat more tender and smooth. Once the skin turns golden brown, add warm water, cover the pan, and bring the water to a boil. Add Sanchi (a type of traditional Chinese medicinal herb), Codonopsis pilosula (a type of traditional Chinese medicinal herb), and goji berries. Reduce the heat to a low simmer. It is important to use a slow and gentle heat to better extract the nutrients from the little rooster and allow the chemical substances in the little rooster and Sanchi to blend together, creating a nourishing dish that tones the qi and replenishes the blood.
Simmer for over three hours before adding seasonings and serving.
Dishes such as stewed little roosters, stewed ox penis, stewed stone frogs, bird's nest soup, and ginseng are all considered highly nutritious foods. Regularly feeding these foods to children can prematurely activate their gonadal axis, leading to the early appearance of secondary sexual characteristics. This is commonly referred to as "premature sexual development."
